Perfect for the mom who is running around all day and sometimes forgets to eat something as the day starts. Or for anyone who just needs a great meal for one any time of the day.

This one is quick, healthy and super delish. It’s Whole 30, Paleo and Gluten free as well!

  • 2 cups baby spinach
  • 2 Pete & Gerry’s Organic eggs
  • ½ ripe avocado
  • 1 sweet potato, diced


  1. Dice and roast sweet potatoes for about 30 minutes at 350 degrees.
  2. Wilt spinach on the stovetop with olive oil.
  3. Fry eggs.
  4. Mash avocado.
  5. Add all ingredients to a bowl.
  6. Enjoy
