A colorful idea for any time you want some healthy comfort food.


Prep Time: 5 minutes

Cook Time: 8 minutes



Serves 2


Preheat griddle or spray skillet with avocado oil on medium-low heat


2 Pete and Gerry’s Organic Eggs

1 banana

2 handfuls fresh spinach

1 scoop collagen (such as VitalProteins)

1/2 teaspoon cinnamon

1/2 teaspoon baking powder

1/2 teaspoon vanilla

Optional: peanut butter, blueberries, extra egg for topping


  1. Blend egg, banana, spinach, collagen, cinnamon, baking powder, and vanilla in a blender, such as a NutriBullet.
  2. Scoop 2 tablespoon-sized pancakes onto griddle/pan on medium-low heat.
  3. Flip when sides start to cook and bubbles form – about 2 minutes.
  4. Once finished, top with extra Pete and Gerry’s Organic Egg and drizzle with peanut butter or your choice of topping. ENJOY!
