Ingredients

  • 4 whole Pete & Gerry's eggs + 2 egg yolks
  • 1 cup whole milk (sub: half-n-half or whipping cream for added richness)
  • ½ cup sugar
  • ¼ all-purpose flour
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter, melted
  • 1-2 12 oz contiainers of Driscoll’s raspberries (sub: cored strawberries, blueberries, or blackberries)

We've teamed up with Driscoll's to bring you the perfect dessert: a delightful Berry Clafoutis. Imagine a warm, custardy base studded with juicy, sweet raspberries – elegant, comforting, and just like your closest gal pals. Made with organic free-range eggs and gorgeous Driscoll's berries, this clafoutis is perfectly paired! Individual portions make it easy to share with family and friends.

To whip up your clafoutis

  1. Preheat oven to 375° and place a large pie dish or shallow baking dish inside to preheat. 
  2. Add eggs, egg yolks, milk, sugar, flour, salt, and vanilla to a blender and blend for 1 minute.  
  3. Carefully remove hot baking dish from the oven and brush with melted butter.  
  4. Pour a bit of blended batter into the hot dish and bake for 5 minutes to create a light crust. 
  5. Carefully remove the baking dish from the oven and arrange berries in an even layer.  
  6. Gently pour remaining batter into dish around the fruit.  
  7. Bake 30-40 minutes until puffed and lightly browned.  
  8. Allow to cool for at least 15 minutes before serving. Serve slightly warm, at room temp, or chilled with a pile of whipped cream.
