From the recipe author: Avocado toast gets a Chinese twist in this recipe that’s perfect for a savory start to your day, weekend brunch, or any time you want a simple and fulfilling meal. The ingredients are simple – avocado, toast, eggs, soy sauce, and chili oil – yet they come together in the most splendid of ways to really satisfy your palate.
To make the Chinese-style avocado toast
- Heat oil in a skillet over medium heat until hot. Add the eggs. Cook to the degree you prefer, sunny side up, over easy, or well done. Transfer to a plate.
- Spread the avocado slices over each piece of toast. Top with the fried egg.
- Drizzle each toast with 1/2 teaspoon of soy sauce and 1 teaspoon of chili oil. Garnish with sliced green onion and/or sesame seeds, if using. Enjoy!

In place of a fried egg, try topping your toast with a halved homemade soy sauce egg for even more flavor. Poached eggs work great here, too!
If your avocado is a bit overripe and is difficult to slice, you can simply scoop it out and mash the pieces on the toast.
