Simple to make but visually elegant, this chocolate mousse is the perfect addition to a night of festivities. A splash of brandy goes a long way, adding a sweet oaky flavor to the light-as-air dessert.
Directions
- In a saucepan, warm 1 cup of the cream on low heat until bubbles start to appear around the edges.
- Add the chocolate chips and stir gently until the chocolate chips have melted and the mixture is well combined.
- Add the egg yolks and brandy and stir well. Add the butter and continue stirring until the butter has melted and the mixture is well combined.
- Transfer the chocolate mixture to small ramekins or glass jars. Leave about an inch of space at the top of each.
- Place mousse in the fridge for an hour until set.
- By hand or with an electric mixer, whisk the sugar and remaining 1 cup of cream until you achieve soft peaks. Remove the mousse from the refrigerator and decorate with a dollop of the whipped cream and gold sugar sprinkles, if desired.
