Double the chocolate, double the holiday cheer! These Double Chocolate Peppermint Frosted Cookies are a festive treat with rich cocoa, a hint of peppermint, and a decadent frosting that takes them to the next level. Made with Pete & Gerry’s Organic Eggs and Chosen Foods Avocado Oil Shortening, they’re perfect for sharing—or keeping all to yourself!
To make the cookies
- Preheat oven to 350°. Line two baking sheets with parchment paper.
- Whisk together flour, baking soda, corn starch, salt, and cocoa powder. Set aside.
- Use an electric mixer (both stand or hand will work) to cream together shortening, water, and sugars for 1 minute stopping to scrape the bowl at 30 seconds.
- Add Pete & Gerry's eggs, vanilla, and peppermint extract and continue mixing until well combined. Scrape the bowl.
- Slowly mix in dry ingredients until well combined.
- Stir in chocolate chips.
- Use a tablespoon-sized cookie or ice cream scoop to drop cookies onto a baking sheet. Cookies will not spread much, so you can fit 8 on a sheet.
- Bake for 8 minutes.
- Remove from oven and allow to cool completely before frosting.
To make the frosting
- Add all ingredients except water to a mixing bowl.
- Mix on medium until well combined.
- Add water one tablespoon at a time to desired consistency
To assemble your cookies
- Swipe or pipe frosting onto cookies and shower with holiday sprinkles. Add a mini candy cane for a dramatic touch.
