Mixed herbs and greens - mesclun, arugula, basil, sage, thyme, and dill are all optimal choices here - bring an element of freshness to the table, while the chimichurri sauce they're tossed in wakes up your tastebuds with a punch of piquancy.

Directions

  1. Bring a small pot of water to a boil. Carefully lower eggs into the water and boil for 6 minutes.
  2. Remove eggs from pot and place in an ice bath. Let cool for 5 minutes before peeling shells.
  3. In a bowl, toss herbs and greens with chimichurri. Top with sliced avocado, cheddar, and tomatoes. Slice peeled soft-boiled eggs in half and add to bowl, then serve.
