To make the dressing
- In a small bowl, whisk dressing ingredients until combined. Set aside.
To make the sandwich
- Roughly chop hard-boiled eggs and place in a large mixing bowl with turkey.
- Mix in dried cranberries, walnuts, spinach, and herbs. Add dressing and fold ingredients together until thoroughly combined.
- Serve atop toasted bread as an open-faced sandwich or between soft dinner rolls.
