Ingredients

For the fried rice

  • 2 cups cooked rice, cooled
  • 1 tablespoon + 1 teaspoon vegetable oil, divided
  • 1 1/2 teaspoons soy sauce
  • 1 tablespoon butter
  • 3 to 4 cloves garlic, minced
  • 2 scallions, sliced, whites and greens separated
  • 1/4 teaspoon white pepper
  • Salt, to taste

For the Spam and egg tofu pouches

  • 1/2 teaspoon vegetable oil
  • 3 ounces Spam, cut into small cubes
  • 4 large Pete & Gerry's eggs
  • 1/4 cup (1/2 stick) unsalted butter
  • 12 seasoned aburaage (fried tofu) pouches
  • Chopped chives, for garnish, optional
  • Furikake, for garnish, optional

From the recipe author: Aromatic rice, creamy soft scrambled eggs, and savory fried Spam are stuffed inside sweet marinated tofu pouches for a unique way to eat Spam fried rice. Instead of stir-frying everything together, keeping the components separate allows you to build these fun pockets of flavor. Marinated aburaage, a Japanese style of deep fried tofu, is typically stuffed with sushi rice to make what is known as inari sushi, but here, a humble Asian American dish gets reimagined in this super snackable format.

To make the fried rice

  1. Break up the cooked rice so there are no clumps. Add 1 teaspoon of vegetable oil to help keep the grains separated.
  2. Heat a large wok on high until smoking, then add 1 tablespoon of vegetable oil and swirl to coat. Add broken up rice and stir-fry until it's toasted and has a nutty aroma, about 5 minutes. Add soy sauce and stir-fry to incorporate.
  3. Push rice to the sides of the wok so the center is exposed and turn heat down to medium. Add butter, garlic, and scallion whites; stir together until the butter is completely melted and bubbling. Add scallion greens and white pepper and toss all the contents of the wok together until the ingredients are incorporated. Salt to taste and remove from heat, allowing to cool slightly before handling.

    To make the Spam

    1. In a small skillet, heat 1/2 teaspoon vegetable oil on medium, then add cubes of Spam. Fry and flip as needed until Spam is slightly browned on all sides. Transfer to a bowl and set aside.

      To make the scrambled eggs

      1. In a sauce pot, combine eggs and butter. Place the pot on low heat and stir vigorously with a spatula until the butter is completely melted. Next, stir slowly until eggs start to set along the bottom of the pot.
      2. Use the spatula to gently scrape the eggs into large, soft curds as they set. When almost all of the eggs have set, remove the pot from heat and allow the residual heat to finish the cooking.

        To assemble the pouches

        1. Open one of the aburaage pouches and spoon 2-3 tablespoons of fried rice inside. Using the back of a small spoon or wet fingers, press rice down into the bottom and corners of the pouch so that the pouch can stand upright. Repeat with the remaining pouches and rice.
        2. Divide scrambled eggs evenly among the tofu pouches, then top with fried Spam cubes. Garnish with chopped chives or furikake as desired.
