From the recipe author: this gooey and delicious spinach and three-cheese skillet pizza is inspired by the traditional Georgian cheese bread dish known as khachapuri. The best part is that it’s topped with a pasture-raised egg yolk which is stirred into the freshly baked cheese along with a dollop of butter to form the creamiest combination of flavors that makes for a mouth-watering appetizer or an easy weeknight meal.
To make the pizza
- Preheat oven to 400F and grease a 10" cast-iron skillet. Place pizza dough into skillet and use fingertips to spread it evenly until the bottom of skillet is completely covered.
- In a medium bowl, combine the 3 cheeses, spinach, and 1 egg. Mix to combine.
- Spoon cheese mixture evenly into the center of the dough, leaving a 1" border around the edges for the crust. With the back of the spoon, gently press cheese down to flatten.
- Transfer to oven and bake for 15-20 minutes, or until the cheese is melted and bubbling and the crust is golden. Carefully drop the egg yolk into the center of the pizza and return to the oven to bake for another 3 minutes.
- Remove pizza from oven and top with butter. Stir the yolk and butter into the cheese to complete the cooking of the egg. Sprinkle with fresh herbs and crushed red pepper. Slice and serve warm.
