Some swear by poached eggs on avocado toast, but jammy eggs come with the benefit of being unfussy, requiring less precision, and eliminating the need for a fork and knife. Although everyone has their own definition of the term, most people agree that jammy eggs fall somewhere between soft-boiled and hard-boiled, typically cooked for exactly 6 minutes to achieve a tender but not runny yolk with the consistency of jam (hence the name). Perched atop mashed avocado on toast and finished with flaky sea salt, jammy eggs make for a simple yet special meal.
Directions
- Use a fork to mash half of the avocado half onto each slice of toasted bread.
- Sprinkle the avocado with flaky sea salt and red pepper flakes to taste.
- Top each slice of toast with one quartered soft-boiled egg.
- Add an additional sprinkle of flaky salt to the eggs and enjoy!
