The success of avocado toast depends entirely on the quality of the ingredients you use. Since the dish is so simple, you’ll really taste each element, so choose the very best you can find: good artisan bread, a very ripe avocado, and our excellent eggs. Rather than overdo it with too many toppings, focus on a few little elements like lemon juice, chili flakes, and a drizzle of hemp-infused coconut oil to enhance the creamy, rich taste of the avocado and the savory poached egg.

Directions
- Bring a small pot of water to a simmer. Crack egg into a small dish or ramekin. Using a spoon, stir the water in pot vigorously to create a vortex, then gently slide egg into the center of it. Cook until the white is just barely set but yolk is still quite soft and runny.
- Using a slotted spoon, carefully remove poached egg from water and set on a plate while you make the toast.
- In a toaster or heavy-bottomed skillet set over medium heat, toast bread until golden brown.
- Cut avocado in half and remove pit. Scoop avocado into a small bowl, add lemon juice, and mash. Spread a generous layer of mashed avocado over toast, then drizzle coconut oil over the top. Sprinkle chili flakes and flaky sea salt over avocado.
- To finish, gently slide poached egg onto the toast and garnish with the microgreens or sprouts.
